French blue mould cheese, made from pasteurized cows milk, excellent creamy texture, covered with white plum and plowed inside with blue mould holes. Carré d'Aurillac is produced in Saint-Mamet-la-Salvetat, in the south of France, and is matured for more than four weeks.
Made in the heart of Cantal, the Carré d'Aurillac comes from a unique recipe inherited from the great cheese traditions of Auvergne. A surprising marbled cheese with a creamy texture. A square of cheese coated with a flowery rind characteristic of soft pasta. Specific know-how for a unique cheese gives to Carré d'Aurillac cheese a real "surprise" taste. It combines the soft characteristic of a soft dough with the character of the cheeses typical of the region. He knows how to be discreet and go back to power thanks to his refining. The milk is carefully selected and mixed with penicillium. This is the source of his sweet marbling. It then follows the normal process of cheese making: coiling, draining, moulding and salting. Then comes the stitching phase, that will give the Carré d'Aurillac the oxygen to develop and makes its taste so unique.
