History and uniqueness

Pave d’Affinois is a brand of soft cheeses which are very different because of their characteristic square shape and creaminess. The manufacturing process for this soft cheese includes a unique stage, ultrafiltration, which differs from the traditional cheese-making process and gives these products specific features: smooth and consistent texture, a very thin rind, consistent production quality, more calcium, phosphorus and proteins than other soft cheeses. The brand has a wide range of products made with cow’s, goat’s and ewe’s milk, as a whole cheese or in portions with the Mini Pavé d’Affinois range. This range is naturally lactose-free.
